Low carb diet advice for T2 diabetic

Hi all. Looking for advice for my husband who has been T2 for over 30 years (unmedicated) and has been lucky or stupid enough to be able to eat whatever he wanted without effecting his hba1c levels. Untill now. Bloods have gone through the roof since retiring, weight gain and no energy plus high bp has all made him realise he needs to make some drastic changes.

Apparently it's my job to plan the meals ( you understand it better dear) but I'm struggling to plan around his ingrained ideas about food. Cereal for breakfast, sandwich (4 slices of bread) for lunch followed by dinner which has to have rice, pasta or potatoes! Oh and constant snacking and beer...

He won't eat avocado, cauliflower or fish/seafood. I'm reading as much as I can but was hoping I could get some advice from people with real experience of the diet???

Has he seen a dietician?

Not yet. He has just been referred and we have been told he has at least a 20 weeks wait till first appointment

I've been LCHF for almost a year (with the occasional hiccup!) and my blood sugar has normalised beautifully. I'm gradually coming off all my meds. It really is life-saving.

If he's going to do it, he has to ditch his expectations about food completely. All those carbs he's eating have to go. No cereal, no bread, no rice, pasta or potatoes, no beer.

I don't think you can do it for him, though. It's a fairly extreme change and unless his head is in the right place, he won't do it. He needs to want it himself.
