Hey guys can you suggest easy but tasty camping dinners to cook?

I always do one pot pasta meals or beans on toast!! Looking for some inspiration, also have a fussy one year old to feed!

Couscous? We took a couple of packets of this and used it as the basis of a meal (with courgettes and halloumi). I also made this Korean beef - minus some of the sugar and with some finely sliced peppers added - because the children LOVE it. I actually made it at home and froze it so we could use it as an ice block and then eat it on the second day (with one of those packets of microwave rice that you can stir-fry). However, I'm going to make it there next time we go camping, as I reckon it could be done pretty easily on site.

We also had pancakes for breakfast a few times (with pre-measured and bagged dry ingredients), and I reckon those could be easily adapted to make, e.g. sweetcorn fritters.

Spanish omelette with all sorts of veg and some meat (bacon pieces - fry those first and use the fat to fry the onion etc for extra flavour!!, chicken, prawns...) and some grated cheese on top. Slice like a pie and enjoy with salad.

Tin foil parcels with some salmon pieces, onion, carrot and potato all diced up together and seasoned, cook over a fire or BBQ. Can mix up the options, use meditteranean type veggies, chicken, prawns, ...just make sure there is a little moisture in there to help it all cook (a tablespoon of water, or maybe wine for adults!).

Skewers on a BBQ, mixing meat/fish and veggies. If have a BBQ or fire, can wrap potatoes in foil to bake at the same time.

YY to couscous as you only need boiling water for that, and can cook a sauce on your ring.

Chilli con carne served in a pitta bread pocket or a packet of doritoes opened along their side (not at the normal top opening).

Another staple when we camp is buying a hot rotisserie chicken one evening and a fresh crusty baguette, and enjoying hot chicken sandwiches with salad.

Tinned potatoes-apparently also good skewered, seasoned and barbecued. Lots of takeaways!

for 2 people
pack of uncle ben's micorwave rice (flavoured or plan)
tin chick peas
pepper
chorizo/ham if not veggie
maybe some cherry tomatoes
salt/pepper/chilli sauce for extra flavour
oil

fry pepper and chorizo
add rice/drained chickpeas/flavour and half cup water for rice
cook for 3 mins , add tomatoes, cook 2 more
eat

for 2 people - can tinned potatoes, can butter beans, some cherry tomatoes, chorizo (I like chorizo!) red onion, oil, garlic, salt pepper

fry onion and choriz and garlic, add rest of ingredients and heat up, maybe bit of water to stop it sticking, don't stir too much or potoatoes will fall apart
