What's your best hot one pot camping meal?

Dd is going away camping with a load of 14 and 15 year olds on a trip and her duty is to feed her group of 15 of them with a warm evening meal, one pot and preferably vegetarian. Any ideas?

My only experience of camping was a night in a forest when I was a girl guide and my friend and I got sent home early for being naughty Hmm so I haven't got a clue.

Veg curry with nan and poppadoms
3 bean chilli with nachos
Pasta with stir in sauce
beans and veg sausages with buns

Depends on the level of sophistication required Grin

Our stock easy one pot, which both kids and adults seem to love, is cowboy casserole, which I am pretty sure I got off here

Fry some sausages (could be veggie), cook for a bit, add chopped onions, cook for a bit, add cans of baked beans, cook, add chopped tinned pineapple (really), cook some more, serve with rice or pasta or bread.

Nachos and chilli would go down really well and all she'd have to figure out is how much to make for the 15 portions. There is a budget but she might be able to get baguettes or flat breads too.

GobblersKnob, mmm, that sounds lovely although she can't get baked beans as it's abroad and they're not readily available.

Bolognese sauce with added chorizo sausages chopped up and eat it with baguettes instead of pasta. It's always out first night camping tea but I pop fresh pasta into the pot near the end of cooking and sort of steam it in the sauce till its cooked. That's for four of us though....can't imagine doing that for fifteen!!

Savoury rice - chop up onion, garlic and whatever veg is to hand (current favourites are peppers, peas, broccoli, sweetcorn and spinach). Fry. Add rice, water, stock cube and seasoning (I use chilli powder, curry powder and pepper). Cook until rice is cooked, giving it a stir very so often, and adding more water if needed. The idea is rice absorbs all the water and flavour, so don't add so much water it needs draining.

Our girl scouts recently made falafels and wraps/salad at camp. Sounds a bit of a faff, but it worked well. They brought canned chickpeas which they mashed with a potato masher and then added the flour and spices (pre measured at home and brought in a zip lock bag) They mixed it up with a bit of water and fried them. Sorry, not exactly one pot, but went well with wraps, salad and yoghurt

Pasta pesto, spanish omelette, veg curry (with naan or pitta), stir fry with noodles (quicker to cook than rice), veg fajitas (use butterbeans for protein). And for afters, making their own popcorn maybe?
