To ask you to meal plan for me-complicated

Family of 4-1 coeliac, one veggie, two normal diet.
Crap cook, want to do tasty meals ideally so everyone eats with as little variation as poss.
Nothing i do tastes nice. Would make life better.

2 quick go to faves at the mo are...

Jackets with beans and grated mozzarella. (Bacon too but that won’t suit your veggie!)

Pasta (gluten free) with pesto and on top: pesto, chopped baby plum toms and sliced mozarella.

Thanks. Never done pesto. Forgot to say one has asd so needs to be stuff which can be separated as well!

A fave here with three of us is mung beans cooked in a pressure cooker and cooked curry style with tomatoes and spices. Served with rice. Also black chick peas are delicious cooked the same as above with diced potatoes added, that's served with broccoli and green beans etc.

My dd is vegetarian, husband likes meat, ASD son is unbelievably fussy with smells and textures and I'm fairly easy going.

I make all sorts and often pick up recipes from Pinterest, this is a selection of our rolling menu

Risotto
Stuffed peppers
Veg lasagne
Fajitas (I use old el passo wraps from Asda)
Jacket potatoes, in winter with beans,cheese, Quorn gf sausages
In summer with salad and marinated quorn fillets sliced up
Sweet and sour quorn done in slow cooker
Sweet potato and quorn curry
Homemade pizza currently with Bfree stone bake gf bases from Asda
Pasta bake

Tagine - chopped onions, peppers, aubergine and sweet potato, tin of chopped toms, tin of chickpeas, couple of spoons of tagine paste. Serve with a dollop of greek yoghurt on top and pitta (GF Pitta) on the side. Chuck it all in a slow cooker in the morning and forget about it.

Curry - potato, butternut squash, onions, mushrooms with tin of coconut milk and curry powder (check GF). Serve with rice.

Stir fry - big bag of mixed stir fry veg plus extra peppers, plus tofu for the veggie and chicken for everyone else.

Lasagne. Make the meat mix with either meat free mince (if GF) or chopped veg plus a tin of green lentils and marmite. GF pasta sheets (or thin slice butternut squash!).

Pasta would be good do either tomato sauce, pesto or cream cheese. Add a selection of bacon, softened peppers, onions, courgette, mushrooms etc. plus cheese. Everyone can make their own, it can be veggie (could add some chicken for meat eaters) and can be served separate. Pair with some garlic bread or salad.

Shepherdess pie - a mix of butter beans, grated carrot and courgette, peppers, onions, red lentils and sweetcorn in a tomato sauce (a bit like shepherds pie). Top with mash - maybe serve it separately so this covers all the bases. Let me know if you want the recipe.

Omelettes - either normal or bakers omelette. Fillings can be varied for meat/veggie and would be gluten free. Can add salad or baked beans.

Sausages, mash and veg. Get some veggie sausages and just check the packet for gluten free ones, a lot more a fine to eat now.

Is fish an option? Or maybe a roast dinner at weekends with a quorn substitute?

Vegetable stir fry with rice noodles? Add chicken, pork or beef for the meat eaters. Just be careful with soy sauce for Coeliac

I have 1 ASD 1 veggie 1 fussy 5 year old and 2 normal diets.

Stuff that works for us with a little tweaking:
Sausage and mash (most supermarket own brand sausages are now gluten free it seems, veggie sausages are easy)
Jacket spud and beans (ASD one has beans served in a ramekin next to the potato)
Pizza (If your ASD one will tolerate, mine won't so he has a sandwich that night)
Pasta with different toppings - mine often have tomato puree, pesto (check for gluten though as some contain it) and grated cheese on theirs.
Dippy eggs and soldiers/scrambled eggs on toast/poached eggs on toast/omelette with random veg and cheese. If you add grated raw potato to it (cook it in oil for a bit before adding the egg) it's very filling.

Chana dahl which works for everyone except not separate so probably not autism friendly. Consider making double quantities and freezing some.

Three tablespoons veg oil, onion, tablespoon ground cumin, 1-2 tablespoons ground coriander, bunch fresh coriander, 3 tins chopped tomatoes, 2 tins chickpeas.

Chop onion finely, heat oil in a big pan, put in onions and cook over low heat for a solid 5 minutes til transparent, stirring to avoid sticking. Add the spices and stir well. Using scissors, chop the coriander leaves into the pan and stir. Add the chopped tomatoes, stir and simmer for 20-30 minutes - add a bit of extra water or another tin of tomatoes if it looks as if it will stick. Drain the chickpeas, pour them in, stir and bring back to the boil. Simmer for 10 minutes.


Otherwise, hard boil eggs, slice in half, make a fuckload of cheese sauce and serve with salad and potatoes. Non separators can pour the sauce over the eggs.

Meze! Not every night, but occasionally. Hummus, falafels, pitta, olives, tomatoes, manchego, posh ham, chunks of cucumber and feta, salad. All separate, everyone picks the bits that suit them.

Pesto isn't vegetarian unless you make your own and sub the Parmesan for an alternative cheese which doesn't use rennet - but not all veggies will object to this so might be ok!

Coeliac here with 1 person who doesn’t eat fish or chicken so our favourites tend to be something everyone can eat with the meat as a stand alone item.

So

Dhal, rice sometimes with tandoori style chicken or fish
Aubergine parmesan (dunk aubergine in a light batter either chick pea flour or a gf flour) normally with roasted chicken
Stir fries with rice noodles
Thai curries with rice
Lentil bolognaise (freeze in portions for the days you have normal bolognaise)
Shop mezze gf bread/normal bread adn hummus, stuffed peppers, vine leaves, salad, sometimes tuna with it.

Our current fave is Greek 'kebabs'.

Flatbuns from Aldi (flatbreads or pittas work well too and you can get gf versions too) dampened with a little water and grilled for a minute on each side. We wrap them in foil so they stay warm throughout the meal.

Chopped cucumber, cherry tomatoes and plain black olives (we like Sainsbury's basics in a pot)
Cubed feta cheese, chopped lettuce and sliced red peppers.

Natural yoghurt with finely chopped mint and cucumber

Chili sauce- we use chipotle paste mixed with a little water but any kind would work.

The non-veggies have chicken cooked with Italian spices.

Everything in little bowls on the table and everyone helps themselves and fills the pittas with whatever they like.

Low stress in both the preparing and the eating!

Leftovers are great in packed lunches too!
