Just wanted to share this recipe that a friend of a friend gave me. It made a really convincing sponge and if i didn't know I wouldn't have guessed it was dairy and egg free.
8oz SR flour
3 tsp baking powder
6 oz caster sugar
6 tbsp (90 ml) sunflower oil
9 fl oz water
vanilla essence for plain. Bit less flour and add cocoa for chocolate.
Mix together, sperate into two round tins. Cook at 180 degrees, gas mark 4 for 10-15 mins - keep checking as it may need a bit more.
I out all the mixture in an 8 inch square tina dn added a lemon drizzle topping. it look longer to cook but was YUM!
