Blueberry pancakes - they're really good and my DS loves to get involved in stirring up (and eating of course) Other milks/flours may work but this is what we do.

1 cup plain flour
1/2 tsp bicarbonate of soda
2 tsp baking powder
1/4 tsp salt
2 tbsp sugar
1 cup soya milk
1/2 tsp vanilla essence
1 1/2 tbsp vegetable oil
2 handfuls of blueberries (optional)

Method: Sift the flour, powders and salt. Add sugar. Add the oil, vanilla and milk gradually. Stir in blueberries. Make small pancakes in a hot pan in vegetable oil. Delicious with maple syrup and marscapone or soya cream.

Chocolate Fudge Cake
Another treat recipe - makes a great birthday cake, keeps well too. I've made in baked bean tins to create caterpillar and train cakes.
Again other subsitute milks may work.

4oz sunflower marg
1/2 pt soya milk
2 tbsp golden syrup
1 tsp bicarbonate of soda
8oz plain flour
2 oz cocoa
8oz sugar

Method: Dissolve bicarb in 4tbsp of milk. Melt all wet ingredients. Sieve dry ingredients. Add together and mix well. Bake in lined tin Gas 4 (180 degrees) for 30 mins then Gas 3 (30 mins, longer if needed.

I've just about given up cakes because of the egg/dairy problem so am delighted to see these recipes.

Banana and Maple Syrup Stars

225g gluten free flour (I used 125g corn flour, 50g rice flour and 50g tapioca flour)
85g dairy free margarine
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
1 ripe medium banana
2 tablespoons maple syrup

Preheat your oven to 180oC.

Rub the flour, spices, salt (optional) and marg together in a big bowl until it forms a breadcrumb like texture. Mash the banana in a seperate bowl with the maple syrup until it's smooth and wet.

Fold in the banana and maple syrup goo into the flour mixture and knead until you get a firm dough.

Take a large sheet of greaseproof paper (baking parchment), and use this to roll out your dough on. I've learned from experience that gluten free baking crumbles and sticks to the work surface, even if you use a dusting of flour, so I've adopted this method instead as you can lift up the dough in one piece. Roll out the dough evenly to about 7 or 8mm (roughly) and use a cookie cutter to press out small shapes.
Place the cookies onto a flat baking tray, again on a sheet of greaseproof paper, and bake in the pre-heated oven for 18-20 minutes. Leave to cool

Should have added I copied last one from another forum and used normal flour myself as we are OK with gluten, but included the advice on gf flour in case that is useful to anyone. We iced the stars and they looked really pretty - good for CHristmas.

Tarte Tatin

Resurrecting my old thread as this is so good, a treat for dairy and egg allergic (perhaps wheat too if you have a pastry that works for you...) and very easy. I adapted from the Bake-Off cook book. You don't need a special tin, I did the apples in a frying pan then moved to an earthenware dish to bake.

1 roll of jusrol shortcrust pastry
12 eating apples
100g pure sunflower marg
175g golden caster sugar

Melt butter in non stick frying pan, scatter over sugar and place in the cored, peeled apples cut into quarters, or halves if little ones. Bubble over medium heat 20-30 mins until caramel deeply coloured.

Transfer apples to round earthenware casserole (the original recipe uses a metal tin but this is what I did). Roll out pastry and trim to a rough square. Put pastry over apples tucking in sides, prick pastry and bake at 210c for 20-30 mins.

Cool in tin for 5 mins then run a knife around it, place a serving plate over it and turn upside down to release - so that apples are on top.

We serve with soya custard or soya cream, or marscapone/creme fraiche for us.

The pastry offcuts get smeared with marmite, folded over and twisted in strips and put in oven at same time for 'marmite straws' .
