Blueberry pancakes - they're really good and my DS loves to get involved in stirring up (and eating of course) Other milks/flours may work but this is what we do.
1 cup plain flour
1/2 tsp bicarbonate of soda
2 tsp baking powder
1/4 tsp salt
2 tbsp sugar
1 cup soya milk
1/2 tsp vanilla essence
1 1/2 tbsp vegetable oil
2 handfuls of blueberries (optional)
Method: Sift the flour, powders and salt. Add sugar. Add the oil, vanilla and milk gradually. Stir in blueberries. Make small pancakes in a hot pan in vegetable oil. Delicious with maple syrup and marscapone or soya cream.
