Homemade Chutney help?

I've made some caramelised onion chutney for christmas gifts today. The first batch (three large jars) went into the jars tasting quite sweet but with a hint of the vinegar, whereas the second batch two jars) still had a strong vinegar taste.

would they still be okay to give to people? Surely the taste would have settled somewhat by the time they open them right?

also, the first batch I didn't pop the lid on until they were cooled, whereas the second batches went on whilst still hot and the pop-top bit seems to have gone down a little (assuming that means they're airtight?), will the first batch suffer in any way because I didn't lid them hot?
