The team at Flora have asked us to find out about Mumsnetters' signature family dishes.

Here's what Flora have to say:

Our signature family meal is a good roast. Though these days I like to put the meat in the slow cooker do it's lovely and tender and then roast potatoes and other veg in the oven.

Low hassle. High on flavour.

Oh and the key to roast potatoes as I like them? Shake the potatoes so their edges go fluffy before putting in the oil and get that oil hot hot hot!

My repetoire of recipes isn't that big, but I do make a mean broth. My grandmother made the best soup, with plenty of lentils, meat and veg. Tasty, cheap to make and nourishing, and I try my best to replicate it for my family. I hate watery soup!

Our signature family dish is macaroni cheese "with the bits in". We always have macaroni and the ingredients to make a cheese sauce. "The bits" usually include any combination of sweetcorn, chopped bacon, sliced mushrooms, chopped sausage, onion or peppers and sliced tomato on top. Or anything else we can find in the fridge.
The leftovers are great the next day too, if there's any left.

Chez Mckenzie, it's a chicken, lentil and sweet potato curry. Made with half fat coconut milk, I add peas, sweetcorn, mega chopped carrots and spinach if I've got it towards the end of the cooking time.
There is never any left, no matter how much I make.

My signature dish is a beef casserole, brown the beef in abit of flour and oil and put it in a large casserole dish with a stock and a bay leave and a bundle of thyme. Leave to simmer in a low oven for 3-4 hours. Add abit of cornflour if the stock needs thickening.

Serve with dumplings, carrots and greens.

Prawn and chili pasta.

sautee some finely chopped shallots, garlic and chili to taste in a pan with butter and olive oil, add 250g of cherry or baby plum tomatoes, cook for ten minutes. Add some fresh or cooked king prawns and the juice of half a lemon and cook/heat through. Add lots of chopped flat leaf parsley and serve over spaghetti or other long pasta. Serve with parmesan (even if it's not meant to go to with fish, I like it) and some fresh parsley and ground pepper.

My family's signature dish is brownies

185g Flora
185g dark chocolate
85g plain flour
40g cocoa powder
3 eggs
275g caster sugar

  1. preheat oven to 160C
  2. melt chocolate and flora together
  3. let cool slightly and whisk in eggs and sugar
  4. fold in cocoa powder and flour
  5. bake in oven for 35-40 minutes
  6. DEVOUR!

Signature dish chez Hoozami is Roasted Remains From The Bottom Of The Fridge

the secret ingredient is Ras El Hanout spice mix. Every house should have some for that Morroccan deliciousness.

Method:

  • Chop up whatever is pleading for mercy at the bottom of the fridge. Recently this has included: Beetroot, swede, halloumi, celeriac, olives, shallots, cauliflower and broccoli

  • Throw in a big roasting tin with a slosh of oil / knob of butter / whatever baking lubricant takes your fancy (Flora? Wink )

  • Roast for about 20 mins at 180 then sprinkle over some Ras El Hanout, salt and pepper then roast for another 10 mins

  • Serve with couscous and / or a salad. Yummers.

Our signature dish is chicken pesto pasta with spinach and pine nuts. It's quick, easy, filling and batch-friendly for packed lunches.

My daughters would probably choose my trifle - sponge, raspberries, port, more sponge, more raspberries, more port, custard, cream, port syrup drizzled over, almonds. It is the easiest thing in the world to make but tastes like it is the work of a goddess.

Otherwise, probably my veggie chilli, which is now the Mother of All Veggie Chillis, after years of honing the recipe. It includes Quorn mince, red chilli, chipotle chilli, chilli flakes, barbecue sauce, cocoa, coffee, beer, lime juice and various other things.

DHs signature dish is his bolognaise - its so rich and tasty

Mine would probably be 'random noodle soup' which is noodles (either rice or egg) in a broth of miso and soy sauce with spring onions, carrot, broccoli and green beans/mangetout plus some left over meat or quorn

My signature dish is day-before-shopping-day-soup. This is made from all the leftover bits of veg in the fridge, plus an onion, garlic, herbs, chili, few handfuls of red lentils, veg stock and, if I have one, the juice of half a lemon. Hearty, healthy and cheap.

DH's signature dish is pasta with mushrooms and blue cheese sauce.

DS's signature dish is beef casserole with red wine in it.

DD's signature dish is these strange little pea omelettes made in cupcake cases - they're quite nice but a little Confused

Ours is bacon, leek and courgette penne. Put the pasta on to boil and add one diced leek for the last few minutes of cooking time. Meanwhile cut bacon into bits and fry, adding one roughly grated courgette. til it has softened. Drain the pasta, add the bacon and courgette and mix together with a handful of grated cheddar. Worked a treat when baby led weaning as the veg bits stuck to the cheesy bits and it all went in where it needed to go. Grating the courgette seems to render it invisible to fussy toddlers too.

Mine is a good old fashioned roast. Normally pork belly, with roast tatties, pigs in blanket and lots of veg!

Iam known for my sticky toffee pudding as requested each and every Christmas. Also my roasted parsnips and carrots are looking like another seasonal crowd pleaser. On a normal day my signature dish is enchiladas made with turkey mince, veg and red pesto.

Mine is the first dish my mum taught me to cook at age 10, sausage and bean cobbler. Its comforting simple stick to your ribs food which the whole family love, and my 11yr old dd has begun to make it now too.

My signature dish is chicken in a chorizo crumb (serves 2):

  1. fry off half a packet of chorizo slices
  2. grate a couple tablespoons of Parmesan
  3. finely chop a clove of garlic
  4. add it all to food processor
  5. mop up oil from chorizo with a slice of bread and add that too.
  6. whizz it all up and add the juice of one lime.
  7. pop on top of the chicken breasts, cover with foil, bake for 20mins, remove foil and bake for another 15mins.

Mine is a recipe I read a while back:

Steam some asparagus
Heat some oil (or Flora, why not?)
Sauté finely chopped shallots
Add a tub if mascarpone
Add about a teaspoon of Dijon mustard.
Heat through.
Get a roll of puff pastry and unroll on a baking tray.
Add the sauce, leaving room at the edge of the pastry
Layer on the asparagus.
Cook in the oven until the pastry is cooked.

Pretty calorific but so yum!

my signature dish is home made chicken nuggets made with rice crispies as the coating, and proper chicken super tasty you will never buy frozen again, and some different sauces for dipping

Un-exitingly, my signature dish is probably vegetable soup. I make it a lot for lunch to ensure we get more than 5 a day. SOmetimes it uses specific vegetables, but mostly it is whatever is in. 90% of the time, there are a lot of lentils in there too. Always gets eaten.
And homebaked bread, that is probably a signature of mine also.

My signature dish is tattie soup! My dad always used to make this and probably the only thing I learned to cook before I left home (I can cook lots now) Its recovery soup and he always used to make if we had been ill or when I was older hungover. The smell is amazing and fills the whole house.

Their is no strict process to follow as very simple but has

leeks
grated swede
grated carrots
chopped onion
chopped potatoes
veg stock cubes and beef stock cube
occasionaly he used to add roast beef chunks but I'm yet to trial this.

2nd day soup is best and served with crusty buttered bread mmmm.

Mine would be pesto chicken.

Make a mixture of 3 tbsp Philadelphia, 2 tbsp pesto and 150g taleggio cheese (chopped into cubes). Spread on top of 4 chicken breasts and sprinkle with breadcrumbs. Bake for 20 mins, throw in some cherry tomatoes and drizzle with olive oil and balsamic vinegar. Bake for another 20 mins.

Lovely with mash and a green salad.
