I thought it would be a good plan to get some recipes together for cooking on the Cobb.

My starter for ten is beer bread.

500g plain flour
a 330ml bottle of whatever beer you fancy
plenty of salt
oil for greasing the tin

Mix all together in a bowl. Grease round cake tin and put dough into this. Place on top of roasting rack in the Cobb with lid on and cook for about 30-40 mins.

Extra nice with the addition of herbs, garlic or chucks of feta cheese Smile

Ok I am repeating myself here but need to share the joy of.lemonade scones! Get a biggish bowl. Put 3 cups self raising flour in it. Add 1 cup of double cream and 1 cup of cold lemonade (straight out of the iceytek Grin). Mix together with knife. Grease the bottom of a press out cake tin. Pat out scones on it. Put on roasting rack in Cobb. Replace lid. Wait 20 or 30 minutes. Be very smug Grin

Pizza.

Put frying pan on hot Cobb with lid on to heat up. in meantime make pizza base - either bring ready made dough or packet base mix.

Roll out flat with wine bottle then put in frying pan. Cover with passatta and ready grated mozzarella then add toppings of choice - my favorite is anchovies, fennel seeds, chilli and capers. Replace lid and cook for about 20 mins. Yum!

Slice up some new potatoes fairly small. (If you are camping in the Netherlands you can find these ready prepped in the supermarkets).

Heat a little oil in the frying pan and cover with lid to get it really hot (keep it on for most the recipe). Give the potatoes about 15 mins, then add some veg- courgettes, peppers etc. After another 10 mins add either chicken or fish to bake through.

You can also wrap small pots in foil and place these in little parcels around the 'fire' in the moat. Again give these a head start and then bake your fish/meat using the roasting rack, wrapped in foil.

I really recommend taking and using a parchment backed foil- lakeland sell it but so do wilcos, and I imagine a few other places.

I've found roast chicken very challenging and only managed it once after a couple of abortive attempts at home that needed to be finished in the oven. It took loads longer than expected about 2 and a half hours. Tips I've got since then are put the Cobb somewhere sheltered, limit lid lifting and make sure it's small enough to allow lots of air to circulate. Aussie heat beads are best as they stay hot for longer.

I tend to roast gammon or beef when we're away from back up but I'll persist until I've found a foolproof technique because the smug outdoor cheffy twat in me will not be beaten and I love the idea of tucking into a full on roast dinner on the campsite / at the beach :o

Helps a bit if you cook the chicken upside down. And if it is a smallish chicken. If you are still there yellow, do you think it's possible to cook a pavlova on the cobb?

I reckon pavlova could be started on the end of the coals on the cob then put in a hot car all day. Might work!

So do I need the frying pan/ wok for pizza? Would a similar sized frying pan / baking tray work? Can't really justify the £30+ for the wok when I haven't even used it yet (but it did only arrive today...)

Pootling I reckon you could do Pavlova.... In fact, why not try it this Sunday :)

Jennimoo I reckon you could get a small round low sided cake tin and use that on to of the roasting rack to do pizza.

Also noting down the spatchcock tip... Think I've been told that before but had forgotten. How long does it take spatchcocked?

Paella and risotto is very yum to. The long slow cooking lends itself perfectly to Cobb cooking.

That certainly looks like a cool idea but it looks to me as though you'd have to be constantly do feeding it bits of wood to get it even close to being hot enough to cook on. Actually being able to cook would therefore be tricky! Happy to be proved wrong by someone who has actually used one though...

I remember once suggesting Paella as a camping recipe and the poster who had asked for advice doing this face Hmm
Paella is a great recipe for any holiday, even in an apartment because you only need one pot or pan.

So the Pavlova worked a treat! Premade mix with 2 eggs, let the Cobb burn for about 45 mins to cool down a touch and then whacked it in for about 1 and a quarter hours. A touch crispy on the bottom but yum and gooey in the middle.... Pootling and I hugged ourselves in smug glee and took lots of photos while the other 5 adults had the
Hmm what the fuck are you doing that for when there's a perfectly good oven inside out of the rain face :o

We didn't stay out in the rain and watch it though, just nipped out, put the pavlova in the Cobb and checked on it halfway through and at the end! 'Twas very tasty. Not sure I could be bothered whisking up one of those things by hand though. Pondering the next challenge now, anybody got any ideas?
