Christmas

Going out for Xmas Day lunch, so what shall we eat on Boxing Day?

I'm thinking something hearty and comforting, but not involving much actual cooking on the day. What would you do?

We'll be having turkey when we go out on Xmas Day ... last year we did the same at my parents' house, and she actually roasted small a turkey joint so that we could have faux leftovers on Boxing Day, but by the time you've sorted out all the various trimmings, that sounds to me like it might defeat the purpose of opting out of cooking Xmas dinner!

Make a hearty stew in advance and freeze it. Defrost on Christmas day, and it's ready to be re-heated on Boxing day. If you chop up loads of root veg in the stew when you first make it you won't need to do veg, apart from some mashed potato.

You will only need a buffet tea later.

Second girlywhirlys idea and I'd also do Nigellas Ham in Coca Cola on Xmas eve so you have delicious ham sandwiches avaiable for boxing day tea..

We are just having party buffet type stuff from Iceland or Tesco.

Great, thanks all, good ideas. Think I'll do a stew. Any recipes?

Whoisthatmaskedwoman - I've never cooked the Ham in Coke - is it good?

It does sound great but we've only got one or two ham fans in our family, unfortunately. Any other recipe thoughts gratefully received!

Jamie's stew for Jools is always going down well here.

Yes, a nice big ham. With a big dish of cauliflower cheese or dauphinoise potatoes, macaroni cheese or bubble and squeak or something that can be made in advance and kept in the fridge for a day or two, or even frozen.

You can make and freeze ahead Nigella's filled potato skins. They're fab with a ham.

Thanks all but no ham!!! Xmas Smile

we will be cooking 'gourmet' for adults and less fancy for kids, toasted sandwiches which we shall cook on the fire in the living room of the house we will be staying in. I love stilton, walnut & chutney, DP likes bacon & egg, DD likes cheese & beans.

Glad you found it franch. It is really easy to make and very, very tasty. Serve with warm crusty bread! I am making it tonight for dinner tomorrow!
