Losing around 1lb a week

On my first week of dieting I lost 3lbs.
On the second week I lost 2lbs.

From thereon I seem to be losing roughly around 1 lb a week, I'm happy with this as I'm not trying that hard, I'm still eating biscuits in moderation, the odd chocolate bar and the occasional packet of crisps so I don't feel like I'm missing out on anything, I've just been doing alot more exercise and cutting food portions down.

So in around 5 weeks I have lost just under a stone.

I now weight 11 stone and I want to be down to 10 stone...what I'm wondering is, will my body just stop losing weight when I've lost enough or will it continue to drop until I start eating more again? In other words...will my body know automatically or will I need to keep an eye on it all?

well done so far.

you'll need to eat less as you lose weight as your body will use less calories just moving around as there will be less of you to move! or you could increase exercise.
