Freezing finger foods

I want to prepare in advance veg sticks that I can then defrost/cook quickly for my DS. For example sweet potato, cut into chip shapes, do I freeze before or after cooking? Sorry if this is really obvious!!!

I roasted the sweet potato wedges then wrapped in foil in portions and can cook from frozen in 15/20 mins.

Yes deliberately wrapped in foil so I could just bung in huge oven without doing anything else. Once wrapped put all the packages in a freezer bag. I read something about freezer burn??

You need to boil raw veggies in order to kill the enzymes that control ripening. From what I've been told by from the DC's dietician & nutritionist.

This is what I do; Boil for a few minutes (start timing when the water is a full boil), then dump veggies immediately (using a spoon or ladle) into a bowl/sink of ice cold water (so ice and water) to stop the cooking process and leave for the same amount of time you boiled them for. Drain the veggies and pack in freezer bags or whatever, squeeze out as much air as possible then seal and freeze :)

Peppers and onions don't need to be boiled just wash them. And I've heard potatoes don't freeze well, not sure if that's true or not, though!
