How thick should a work surface be?

We are going to have a quartz work surface. The kitchen man was steering us towards just 20mm which he considered more modern. I had thought that thicker would look better. I'm surprised he was steering us towards the cheaper option - I'm actually thinking he wants it to be cheap so we'll say 'yes'.

Does anyone have any opinions on how thick looks good and is practically good - sorry, I know this is VERY boring.

I agree with him.
I looked at my own the other day and thought that they looked a bit thick. I think that in the past it was "the thicker the better" for a luxurious and solid look.
Now, depending on the style of the kitchen, 20mm seems more modern.

I think with quartz I would go with 20mm or 30mm - not any thicker. Looking at pictures the really chunky ones seem wrong somehow. We have 20mm granite, I think 30mm would also be a nice option though.
