Best oil for frying?

I am making chicken 'nuggets' tonight (coated in egg and Parmesan) and wanted to shallow fry them. Usually I'd go for olive oil but have been reading it's not great at temperatures.

I have some groundnut, sunflower and sesame. Would these be any good? I do have coconut oil but don't really want to use that cos the whole pot would be gone.

Not sesame, that's more for flavouring. I think either of the other two, not sure if one is superior at temperature.

Groundnut is good at higher temperatures. I'm Paleo, so I would not use it at all, but instead use lard, ghee or coconut oil.
