Which is better? Gas or induction hobs?

Thinking of getting a new hob. DH wants gas but I like the look of induction hobs. Which is better?

I like gas but haven't owned induction hob, only seen them at friends houses.

Well I love my induction hob.Far easier o clean than gas and just as controllable.

Not till June 6th......and I know the motorhome is "deluxe" model but have a feeling it won't have an induction hob.

When investigating same question in lovely local kitchen showroom, we were told that many restaurants, such as the Ivy, have now converted to induction hobs.

The thing that puts me off induction hobs is the special cookware. They are supposed to be more efficient than gas but TBH (as BCLass says) I like serious cooking and the the control I an get with a gas hob is hard to give up without hard evidence.

Gas. Constant danger with induction ones of forgetting it is turned on and putting your hand on it. (Bitter experience). And you can't control the temperature as carefully as with gas.

Gas! we've just moved to germany and it seems everyone has an induction hob! i bloody hate ours - its a fecking nightmare to clean if you spill anything on it because the heat is still there for a long time after you switch it off (like 20 mins) and it says in the instructions you must not clean it when its hot so the spilled food gets welded to the hob!

and you cant control the heat - things are forever boilng over!

can you tell how much i hate it!!

we had our kitchen done in January and had an induction hob put in and I love it. We used to have a gas hob and I much prefer the induction one.

I can wipe mine down when it's still hot and it's so easy to keep clean. I don't find mine stays hot for very long either once you have taken the pans off. I find it very responsive and heats up really fast. I like the flat sleek look of it too.

You do have to make sure you get compatible pans but most good pans can be used on all hob types.

Gas is much better - more responsive, far better for stir fries, imo. Proper chefs always have gas, I think.

We have induction (had gas at our last house) because there's no mains gas here. Induction is easier to cean and gives you an extra work surface to use when the hob isn't in use.

Induction hobs are more controllable than gas. They don't get hot themselves - the pan on top heats up. They boil water quicker than gas. They cannot be turned or left on accidentally. They are a million times easier to clean. Food doesn't burn on. Heston Blumenthal uses an induction hob. They are more fuel efficient.

You need to use iron-based ans (use a magnet to see whether a new set of pans is needed).

I think most of the criticisms here are of ceramic hobs - not the same thing at all.
(I agree that iduction hobs not as good as gas for stir-fries. But at least as good - if not better - for anything else).

sorry my mistake - i thought induction was what we had in the kitchen! obviously not now i've looked into it!
