Can you steam clean a matress?

And not soak it too much so that it can be slept on that night?

I have done mine in the past (kills dust mites!) just move the steamer quite quickly so it does not soak the material. You can go over it more than once if it is not getting too wet, just go carefully at first.
Then open the windows and let it air dry.

If you're going to do it, its going to have to be a warm day- even steaming them they get quite damp!
