Questions about Apple family sharing

Hi,

We've just given DS my old iPhone 5C, have got him his own giffgaff sim card and I'm trying to set up family sharing.
I've got the apple account, but have got DS his own icloud account which I've logged into on his phone.

I've set up the family sharing on my phone, and I can see his name on my phone. I've also set up 'ask to buy', though he hasn't tried to download any apps since I've done this but I assume it will work fine.

What I need to know is how to stop stuff from syncing from my phone to his, mainly it's contacts that I've noticed so far. It's not a problem really, it's just that he doesn't need to see my contacts I suppose.

A friend was telling me that she has it set up for her children and she can see what they've browsed on the internet etc. How do I see that?
