Storing celeriac

I've got some that I need to harvest and would like to keep it edible as long as possible. I've read to store it in damp peat - is that right, surely damp peat would speed up rotting?

I'm planning to leave mine in the ground & pull up as required through the winter.

I read that it'll be damaged by hard frost.

Yes, I've read that too Stripey, but this guy in Liverpool was harvesting his through to April, so I figure earthing them up a bit and maybe covering with straw/newspaper should protect them reasonably in most parts of the UK.
