Recipe for corned beef hash?

My dh has decided that he wants corned beef hash for tea. I'm not sure quite why, but there you go. I have gone through all my recipe books but no joy. Anyone have a decent recipe?

wow - these are posh compared to my version... mash enough potatoes to feed family and add a tin of corn beef mash and bash until distributed and season very well.. put into a dish and cover in grated cheese bake in oven for 20 minutes and serve with loads of ketchup and baked beans... gorgeous!!

My easy version we had last night:

Diced potatoes
Chopped carrots
Chopped onion
Diced tin of the best corned beef possible
2 beef oxo cubes

Boil potatoes, carrots and onions until soft in water that just covers them.
Drain off half-two thirds of the water
Sprinkle 2 stock cubes and stir in till dissolved
Add corned beef, stir in and then simmer for a short while.

That's it!

The only thing I add to mine when on the plate is loads of salt (dh had a heart attack when he saw me put salt on last night but I don't add salt to any cooking I do or to any food other than this one) and pickled red cabbage!
