Going to be stuck working at home for a month - need lunch ideas!

I've broken my ankle, and as I normally have a fairly big commute by car, I'm going to end up working from home until I'm able to drive again. I lack imagination when it comes to lunches, and have a tendency to just snack a bit if I'm on my own. I am trying to maintain/increase my weight so need to make sure I'm eating properly. But my mobility at least at the moment isn't great, so can't manage extended cooking efforts.

Any suggestions please?!

Something egg-based is often my go to when in working from home. Scrambled eggs with something in them (cherry toms, ham, chorizo, whatever I've got) on crumpets is a go to. Or mashed avocado on toast with a fried egg on top. (Plenty of chilli flakes, lime juice and salt in the avocado is good.) Often I'll also do extra of dinner with a view to heating up for lunch the following day. And soup - I like a fairly substantial soup for lunch, like lentil and bacon, but that might be more cooking than you're up for just now.

Frittata - if you cook your potatoes the night before then it cuts down on the cooking time the next day

Scrambled or poached eggs on toast with avocado (and smoked salmon if you are feeling flush)

Smoked mackerel - as pate on toast or as it comes with bread, horseradish and salad

Baked potatoes - either normal or sweet - with a topping like tuna, or beans

Mozzarella and tomato - either as a salad or in a sandwich

I love doing myself mezze type plates - some hummus, baba ganoush, grated carrot, pitta bread fingers

And there is always beans on toast - with some grated cheese on top if you so wish!

On toast lunches are the best thing about being at home! (Beans, egg, cheese, mushrooms, tomatoes etc)
Or toasties (search on here for the recent toastie thread, there's tons of ideas)
Fish finger sandwiches
Chicken Caesar salad
Cous cous and chickpea salad
Boiled egg and soldiers
Bagel and cream cheese
Falafels and pitta
Housmous and grated carrot wraps
Tuna pasta salad
Lots of quick and easy recipes online for homemade pot noodles.
Cheese and crackers

BLT sandwich.
Naice ham and egg mayonnaise sandwich.
Prawn cocktail used as a stuffing for a large tomato.
Smoked mackerel or trout served with Waldorf salad, add extra mayo if needed.
Sausage roll, sausage sandwich, sausage and beans.

And of course tinned tomato soup served with a cheese toasty!

What about cooking extra dinner the night before , or jacket potato with beans and cheese , or toasties mmmmm

Thanks all, there are some great ideas here, will have a go at meal planning lunches and dinners together.
