Ideas for lunches

DP has finally, FINALLY, come around to the idea of taking food other than cheese and mayonnaise sandwiches to work, but doesn't have many ideas of what he could have instead. I've never had to take packed lunches so I'm lacking inspiration too.

I've thought of cold pasta dishes, but would welcome some recipes of things other than pesto pasta, pasta salad etc. What other things could I do?

It cannot be anything to do with fish or eggs, but other than that, he'll eat anything really. He's a farmer so in a cab all day so no microwave, toaster, kettle etc. He can warm things up next to the engine, but not reliably enough for warming meat, for example.

I'd like to make big batches of things so it will do us both for lunch for two days, or he can take two portions as he often works right through dinner too. There must be more exciting things I can have a go at than bloody cheese sandwiches.

Can u buy a flask and do soup. That would work well in big batches and there can be lots of variety.

I put pasta in a flask and it stays hot til lunchtime. I tip it into a plastic tub to eat although I need to buy a wider necked one though as you get one piece at a time Confused

The only problem with flasks is, DP can never ever remember to bring them back up to the house, so they sit in his truck until I notice they've gone. He's got a lovely great big one that would be great for soups, and a smaller one for tea, but I can't remember the last time I saw them.

The other thing is, I get his lunch ready the evening before because he leaves so early in the morning, so anything that would need to be warmed up in the morning to put into flask would just be a pain.

My healthy lunch ideas:
Spicy couscous with leftover roast chicken.
Wild rice salad with chicken, diced red onion, peppers, cucumber, halved cherry tomatoes, etc.
Stir-fried vegetables (courgette, peppers & red onion), bacon & scrambled egg in a wholemeal tortilla wrap.
Smoked salmon and crunchy claw wrap. For the claw: fennel, apple, carrot, lemon, tzatziki.
Homemade calzone type pizza.
Grilled halloumi cheese, tomato slices, red onion, lettuce, and tzatziki in pitta bread.

Cous cous is your friend! Pan of roasted veg (throw an extra in with a roast one day) and mix with cooked cous cous. Make sure you season it and you've got a delicious lunch!

Rice salad.

Ploughmans type cheese, pickle cherry toms, Apple

Quiche is fab-you can make a big one, cook and slice and freeze remainder in individual portions.

Sausage rolls?

Frittata

BLT/leftover meat sandwiches?
