Summer slow cooker

I love my slow cooker in winter, but can never find appropriate recipes for the summer
Does anyone have any light meal ideas perfect for long hot days that will fill us up?

We still do curries in the summer. They still eat them in India when it's hot!

We use them for a joint that then either gets eaten with salady type things or added into lighter meals.
Mind you, I eat soup all year round so I'm hardly the person to be advising on seasonal meals!

I pour in a little stock add some chicken breasts and some fajita seasoning. Ten shredded and serve in wraps with salad.

Pulled pork yummy with salad home made rolls and coleslaw.

Cook a ham to have cold with some new potatoes and salad.

A whole chicken. Again serve in sandwiches or with salad.

The fake away (lamb kebab thing) with pittas and a yogurt and mint dressing

Chicken (either drumsticks etc or boneless breast chunks), loads of garlic - some sliced, some left as unpeeled cloves, a lemon or two chopped into 8ths, a glass of white wine and lots of black pepper. I often add a bag of those tiny new potatoes and let it cook all together. Lovely served with a green salad.

I often do a lamb thing using basically the same ingredients, can do a joint or shanks or any cut that benefits from slow cooking, again served with a green salad and sometimes couscous.

If you can bare the constant notifications and posts it's worth joining. There are loads of recipes in the files..

Look for the "fakeaway" see if it links to recipe.

I know it's lamb mince but I can't remember the rest.

Although I think there were also mentions of a spice mix night in Polish shops..

Whole chicken, risotto, pulled pork, tomato sauce , jam etc work well in the SC
