Egg substitute in cakes

Dd is vegan

She also has aspergers so when things don't work out as planned she gets very upset

She's trying to bake a cake, I have a few vegan recipes that use oil and no eggs -I think they are fine but she disagrees

She's tried using a standard sponge recipe but substituting the butter for vegan butter and using a powdered egg substitute

Without fail they have been a disaster and it's a massive source of stress for her

Has anyone had any success with egg substitute ?

Ground flax seeds soaked in water go like egg whites, they are mainly good for bran/oat based things as they are earthy

Haven't tried it yet but recently read you can use the water from a tin of chickpeas as an egg replacer.
It's called aquafaba

I find that biscuits, small cake or traybakes work better than large cakes.
This is my vegan fairy cake recipe, which I think is pretty good. I've also got a vegan cookie and chocolate cornflake cake recipe on my blog.

Unfortunately a proper cakey cake has become the holy grail for dd

She wants to perfect it before her birthday

Ah OnyK just read your recipe and saw you pretty much doubled the cooking time

I'm now wondering if she's opening the oven far too early and it's affecting the bake

Chickpea juice, drain a tin of chickpeas and use this liquid in place if eggs in a cake - Google it to find out how to prepare the stuff

I've used chickpea water as meringue before but I've heard it tends to go a bit wet in cakes -not tried it though

She loves nuts a bit too much so will definitely suggest that one to her

Forgot to say, you can bake it as a whole cake, but will need to increase baking time. Tell her to not keep opening the oven, as it can affect the cake. Test this one around 35 min with a fork in the centre (comes out clean = done). Good luck

I made this one recently (without the frosting as I was icing it with fondant for a birthday cake)

It worked really well, was properly cake-y (cakes with oil always seemed a bit greasy) and the cake disappeared in seconds at the birthday party.

There's only a very vague hint of banana in it.

I use banana a lot as an egg replacement in baking - just add an extra half teaspoon of baking powder.

Google egg free vanilla cupcakes and a fab vegan recipe on a website called baking tummies will come up. It's amazing; I add cocoa and a dollop of yoghurt for choc cakes! My son has allergies so we use sham recipes A LOT!!!!

We use flaxseeds for chocolate or carrot cake as I find they have a taste that is hidden by the strong flavours. I'm lazy and use egg replacer in cakes, I prefer Follow Your Heart to Oggran.

(My friend once made me a vegan cake using a suitable Betty Crocker mix and a can of cream soda, it worked and I never would've guessed.)
