I know it's weds but I'm feeling motivated to sort out evenings out and this week have stick to a meal plan (so far!), shopped on Monday and making dinners ahead of everyone being hungry and tired!
Mon - we had (pork and apple farm shop) sausages in buns, with baby corn, new potatoes and salad
Tues - chickpea, sweet potato, butternut squash and spinach curry with rice and naans, done in the slow cooker
Tonight we are having a pasta bolognaise bake with loads of extra veggies in it, carrot batons steamed and garlic dough balls. Am making home grown rhubarb pie for after too.
We have been eating slap dash, emergency meals for ages as I'm so tired with baby not sleeping and DH working long hours. I feel better when we eat properly so am trying hard to get on top of things. All inspiration and (easy) meal ideas welcome!
