Slightly depressing pork loin steaks

They are sitting defrosting and looking all grey and uninspiring.
What can I do with them to perk them up and give them a bit of vavavoom?
I've got potatoes and a random selection of veggies that need eating plus all the usual herbs and spices.

Mm that sounds lovely! I usually brown them then put them in the oven with fried onions, white wine, bit of stock and flour to thicken, tomato purée and oregano. It's from a recipe years ago that I lost so I have to improvise a bit now!

Slice them up and do a stir fry with veggies, chilli, noodles etc?

BTW how do you get them properly (all caramelised) browned? Mine tend to end up cooked but grey.

Hot pan first, some sage and lemon then braise with some milk on low temp.

for nice browning... hot pan, crush a small amount of stock cube (chickeen/pork) into some olive oil and make a paste, brush over steaks, fry.


mmmm, pork for tea for us too. Going to try your onion/white wine combo, cheers for the swap :)

I pan fry seasoned with butter, then add a few handfuls of gooseberries, a splash of vermouth, a teaspoon or two of sugar and some fresh oregano. Kids absolutely LOVE it.

Fry in a little olive oil and a knob of butter to get nicely browned.

For more tasty pork, while its frying, dice an onion very finely, when the pork is cooked remove and keep warm. In the same pan, gently fry the onion till pale golden, then add some crushed garlic and powdered paprika and stir well, add some cream or fromage fraise and heat till sauce bubbles. Serve over pork, lovely with mashed potatoes or noodles.
Instead of paprika you could add whole grain mustard, also very tasty.

I'm going with lemon, sage, finely chopped onion and some stock cube paste.
Will try some of the others on future sad pork days.

Marinade in soy sauce, garlic and ginger paste, sesame oil and a dash of chilli oil if you fancy it. Then Bing in oven.

Alternative is to smear with Dijon/garlic/thyme/olive oil paste. Roast on tray in oven. Amazing flavour.
