Surely it should be custard based on your name!

I wouldn't bother about the dates, but if you're stuck:

Cake (lots)
Fritata (can freeze)
Eggs bread
Pancakes

Or I think you can freeze eggs if you separate them?

I never worry too much about the dates. I pop them in water - if they float then they are off if they sink then they are ok. You would know if an egg was off when you crack it. I wouldn't worry about them until up to a week late at least.

Eggs will keep for ages after their use by date, I'd just use them as you need them over the next week or so.

You can freeze them and they'll make a nice fried egg later but I eat them after the date!

I don't worry about egg dates. Just test to make sure they're not rotten. If you are though, I would make some little oven baked Omlette type things.

Used 2 to make eggy bread for the DC's dinner, then 2 to make a batch of banana cakes. I'm thinking custard and meringue next. In fact, is there such thing as a custard meringue tart? Illes de flottante! Probably not spelled correctly but still - excellent brainwave!

Try zabaglione (easier to make than to spell although a bit time consuming) if you have told left after the meringues. It's very much like fancy, boozy custard. If you don't have Marsala other sweet alcohol would work too.
