Quick healthy meal ideas for busy family

Hi, I'm in need of some inspiration for some quick yet tasty meal ideas during the week. Any ideas?

DS' favourite food is thankfully the easiest recipe.

Salt and Pepper Chicken
Stick skinless thigh fillets in a bowl, add a bit of olive oil, salt and pepper (lots of salt and lots of pepper) and mix. Cook in a frying pan for 5 minutes each side. I have experimented with adding a little paprika - which really lifts the flavour.

DS likes his with white rice and side order of peas.
DH likes his with instant brown rice and peas.

Simple and delicious.

It depends how quick as we sometimes barely cook at all and have toasted sandwiches (cheese and tuna are popular; I try to limit ham).

Baked chicken thighs with veg like tomatoes and onion thrown in

Make big batch bolognaise ahead and freeze for several meals

Nice soup

Homemade hamburgers (whizz an onion up til fairly well chopped, add a pack of mince with a crushed clove of garlic and lots parsley and whizz a little bit more. Our children love this).

Egg fried rice

Sometimes I try and make things more interesting but these things are all quick!

Tacos are very easy - fry up some mince/quorn/chicken/leftover roast etc with paprika or chilli and add a bit of passers. Serve with wraps or tortilla chips, and the best bit - bowls of salad, yoghurt and grated cheese. I find if I put everything in separate bowls they will all eat more veg than usual!

Thai green curry is good too, you just fry veg or meat or fish with a bit of green curry paste, add coconut milk and serve with rice.
