Give me your best leftover roast chicken recipes

I have quite a lot of leftover roast chicken from Sunday. I'm a bit bored of my limited leftover repertoire which consists of noodle soup, fajitas or something involving chicken and avocado. Can you inspire me? Have a fairly well-stocked larder. Stock from the chicken is already done. Oh, and I some bacon which probably needs eating too!

What about chicken fried rice.
Cooked Rice
Veg
Egg
Sesame oil
Chopped chilli's
Soy sauce
Shredded chicken

Oh yes. I love fried rice. That's a good idea.

How long would you keep roast chicken? I have loads (was a massive chicken!) and would still lots after fried rice.

In the fridge and covered I would keep for 3 days.

Have you tried making chicken pitta? It's really good with coleslaw and salad!

Risotto. Add some chestnut mushrooms too Just make sure you boil the carcus?and strain as the stock is key to maximising flavour.

completely agree with risotto - and made with stock from the chicken carcass - it is utterly diving and like comfort food - my favourite recipe is Nigel Slater's
