Half a cooked roast beef joint

So last week did roast beef. Only had half and couldn't think what to do with rest; so just put it in the freezer! Any ideas of what I could turn it into?
Would something like a pie work?

Stir fry with peppers, spring onions, (cut on the slant) ginger.

Cube it and turn it into a stew - when I have leftover beef I cube it up and cook it with onions, leeks and red wine then freeze it like that - I keep it quite liquidy, then reheat it with few handfuls of rice, as a one-pot thing.

You can 'mince' cooked joints in a food processor - just cut it up into roughly inch cubes and pulse it. You'll need about 400g for a normal sized food processor or the meat will just bounce about. I use it in this recipe which works just as well with beef and lamb, the only changes I make is that I add a bit of thyme to the meat and grated cheese on the top.

If the beef is cooked rare then you could make weeping tiger. I'm not sure if that's the recipe I've used but that site normally has good thai recipes.

you could also slice it thinly for sandwiches. Thick slices can be too chewy.

I don't like mince, I think it disappears, but would cut it to chunks for a casserole.

It freezes better if in a tub and covered with gravy, sauce, wine or something, to the brim with no air, so it can't dry out.

Roast beef is the easiest leftovers as you can practically use it like raw beef - cut in chunks, use as stewing steak, cut v v small and use as mince, cut into strips and use like strips for a stirfry. All best if you cooked your beef rare. It does tend to dry out in the freezer so would prob be best now in casserole or minced.

Nice in a curry, but as everyone has said, endless uses for left over beef. Fabulous in sandwiches if it's nice and pink still..
