Clear the fridge

Ok wise MNetters, inspired by a comment on another thread, we're off on holidays on Monday and I always end up chucking stuff out before I go. My challenge is to clear the fridge before we go. To make it more interesting, my parents who we rarely see are staying a couple of days and want to make a couple of "special" meals. Can buy any extra bits needed.

Fridge contents:
Aubergine
Courgettes
Cauliflower
Carrots
Leeks
Celery
Jersey royals
Onions
Spinach (although this is already of dubious quality!)
Broccoli
Tomatoes
Cheddar
Feta

Also a reasonable larder and spices. Generally adventurous eaters!

Please inspire me with recipes.

Use the cheese too?

I'd make and freeze some soups with the cauli, broccoli or leeks.

Or a veg gratin with the cheese in a bechamel?

My favourite at the moment is courgette fritters withe feta in them, i just googled a recipe

Great ideas, hadn't thought of moussaka! Have mince in freezer. Love courgette fritters too (hairy bikers have a great recipe!).

buy a red or green pepper and do pasta bake (based on ratatouille) with courgette and aubergine celery tomatoes and cheese
