Kosher friends coming round need starter idea as meat meal

Main meal is griddled lamb chops served with a bean dish made with wine garlic and onions and a green sauce (sort of like salsa verde). Dessert is Poached pears in syrup of muscat and vanilla. Served with chocolate mousse.

Need a nice starter , dh suggested soup , but cant use any dairy. I thought may be some kind of autumn/winter salad , but again cant use cheese. A bit stuck really.

Smoked salmon on a bed of rocket with a balsamic dressing. What is the mousse made with? I assume no cream.

Im a fallen jew so love having cream, milk and butter in my soup , followed by a good helping of seafood lol. Soups just dont taste the same withought dairy.

Was thinking ceviche may be ?
