Can I use frozen salmon fillets to make nuggets?

Sorry, I suspect this is a super dense question!

Frozen salmon is way cheaper than fresh, but its all cook from frozen, so if I wanted to breadcrumb it, how would I go about that first? Cook it, then crumb it then cook it again?

I'm not sure it is would work Tory.
frozen fish tends to exude a lot of liquid so the breadcrumbs would probably become soggy.. i may be wrong though.
I bought some youngs salmon last week for a fish pie & after cooking it looked considerably different in colour and texture to fresh salmon.

We all love salmon and don't have it nearly as much as we'd like because of the cost. But I've never had any luck with frozen, even just straight cooking it, it goes weird. So we have fresh salmon less often Sad

Mmm, the more I think about it the more I think it's a no goer! Oh well, fresh it is!

What frozen salmon are you buying? I get the fillets from Aldi (you get about five all individually wrapped in a blue packet) and defrost them before I use them. They're nowhere near as firm as fresh and they do give out a bit of liquid as they defrost but I've cut them into fingers and breadcrumbed them before and they're fine. I pat them with some kitchen roll first to dry them off. Or you could maybe blitz them up and make fishcakes instead?
