slow cooker summer

finally feeling like I've had enough of winter casseroles with the sun coming out-but don't know what to put in the slow cooker now! any suggestions please,I only got one at xmas so no idea what to do with it now- apart from put it away!

Chicken or pork casseroles tend to be lighter than the wintery sort with dumpliungs. Think how they get served light new potatoes or rice & spring greens.
I put curry bolognaise & chilli in mine. Slow cooked lamb shanks ( with roast vegetables - courgettes onions squash etc)
Cook pie meats etc in it.

Pasta sauces are still enjoyed over summer in ours.

I also make chilli beans - served with nachos and trimmings and margaritas it feels summery.

Whole roast chicken. Let cool and serve with a summer salad (tart it up as coronation chicken or with a tarragon mayo or something if you like).

Chilli with stewing steak rather than mince. It goes in wraps with cheese and sour cream or on wedges with potato skins and salad.

Shredded chicken, just saw this today so haven't made it! Chicken breasts in sc, small bottle of beer and some salsa. High for 3 hours, shred while in sc and back to high for 30 mins. Fills wraps and tacos.

Slow cooker is great for making caramelised onions. I make mine one day - and then use it for a quick tart another day.

Also slow roast Mediterranean veggies. Served either in a tart or on hot or cold pasta.

NakedBaby how do you do the caramelised onions - do you put sugar or oil in or just sliced onions?

Chilli and lime shredded chicken features a lot through summer here. And I imagine pulled pork will grace the slow cooker wonder page again. And sticky BBQ ribs.

I also like to do aubergine or courgette parmigiana in summer months.

I've tried but can't embrace fish in slow cooker but it can be done and lots of people love it.

pregnant pause fish does work - but it doesn't take long at all. But still handy for getting prep out of the way before the rugrats invade.

mycat components exactly the same as stovetop recipe: thin sliced onions, oil and a pinch of sugar. Stir & leave.

I also do soft onions (. Thin sliced onions & oil - stir and leave) - to top hot dogs - and then freeze the balance for a 'quick start' of the next recipe that starts with 'soften the onions'.
