I'm really bored of my food!

Someone inspire me with your family meals. DH and I both work and have a 2.5 year old DD - I can only bear to spend 20-30 mins preparing food during the week and would like DD to eat it too- she's not particularly fussy but isn't wildly adventurous - she particularly likes all types of fish, eggs and pasta/rice. She's not mad about potatoes as a side but will eat them as a pie topping or something. Also have a baby on the way in July so will want food prep to be shortish where poss.

I already do: spag Bol, Turkey burgers with sweetcorn and feta, fish pie, salmon broccoli pasta, pork and parsnip stew, goulash, lamb koftes (dd won't eat these Hmm), Mac cheese, green veg risotto.

My brain has come to a grinding halt and struggling for ideas!

This has become a firm favourite in our household!

Off the top of my head...Chilli con carne... Pancetta, leek and mushroom pasta with creme fraiche...chicken stew...sausage and lentil casserole (will find the link!). These are some of my repeat ones-I'm going to borrow some of yours Wink

I'm in the same boat I've said to dh that each week I'm trying one new recipe as it gets so boring. Will watch this thread with interest.

The newest recipe was a big hit in our house and was so quick, fry pancetta cubes and chopped up leeks, add to cooked pasta with half a tub of garlic and herb Philadelphia (well Aldi's version), was delicious!

One of my fave midweek meals on a work day for me is onion and garlic chopped and sautéed, add some mushrooms and bacon or chicken if I have it, a large glass of white wine, half a chicken stock cube, 3/4 tub of Philadelphia bubble away while some pasta cooks, drain the pasta, mix together with the sauce and throw in some basil at the end. I keep the frozen basil in the freezer. This feed me, DP and 18mo DS. We just had this tonight Grin

Quiche - great for using up the odds and ends in the fridge
Omelettes
Veggie sausage rolls, or veg and ricotta filo parcels
Stuffed peppers - you can make a batch of filling in advance; serve over pasta or couscous with some passata
Meatballs
Marinated chicken with rice and peas
Sausage and root vegetable tray bake

DD is 2.7 and eats all of these

I would suggest when you've got 5 mins spare, write down what you all like go eat, if you cook it or not, have it when your out or in and start there. Its mostly bad planning.
You don't have time to cook and less soon so now you need plan B.
Think Sunday cook a chicken, have a roast - keep the leftover meat for Mondays risotto. Tuesday is say salmon pasta quick, yes. Then throw a casserole in for Wednesday. What's left add chilli beans etc for a chilli & rice dish for Thursday.
If you get 1 day in front it should be easier for you.
Make double pasta sauce etc freeze some for next time.
Freeze some small portions of fish pie base, pasta sauce etc so you can add mash when your having what your little one doesn't like.

My lists include
Bolognaise
Lasagne or pasta bake - beef or chicken
Pies of - roast chicken & veg, steak or mince & onion. Cottage pie.
Chilli con carne
Pasta with prawn & chilli. Chicken & mushroom, salmon & broccoli Philadelphia sauce
Bread crumbed chicken breast with pasta & tomato sauce
Or savoury rice & curried veg.
Parma ham wrapped chicken new potatoes & veg.
Chicken chasseur next day its pasta bake
Breaded plaice from m & s.
Steak chops or gammon.
Curries of beef or chicken - a jar if your pushed or make one day before.
Burgers & hm wedges. Just nice mince & onions salt pepper & garlic or Sainsbury fresh nice ones.
Meat balls & pasta. Tomato sauce
Sausage & mash. Onion. Gravy. Faggots & peas
Chicken 5 spice & noodle stir fry.
Curry baked cod & rice.

I won't list anymore.

Homemade smoked salmon fish cakes ( can use a cheap pack of bits)
Chicken cacciatore
Lamb moussaka
Tray bake of chicken pieces, new potatoes, chorizo & baby tomatoes
Chicken pilaf
Vegetable lasagne
Spaghetti carbonara
Salmon tikka
Teriyaki chicken/ salmon
