Batch cooking with a vegetarian...

I've been thinking about batch cooking, but I am completely new to the whole thing, was wondering if any of you have some good advice on where to start ?

It would be a lot easier for our lifestyle plus dp and I would like to start eating healthier, I'm 17 weeks pregnant and he's a vegetarian.

Does anyone have any tips on where to begin or could maybe point me towards some good links/resources?

Do you like lentil curry? I love it and make double the amount me and DH eat for extra meals during the week. Make a big veggie chilli using tins of kidney, borlotti and other types of tinned beans plus peppers, onions, garlic and tinned toms. Does your do eat Quorn? That's great for making big batches of vege bolognese. Hope this helps.

Dp loves curry of any kind really so that's a great idea :) we both eat Quorn but he's also fussy. I grew up cooking meat so just getting used to the change and also there are so many things he won't eat that seem to be in most veggie meals, mushrooms, aubergine etc
He loves cous cous though so i will check that out :)
