Chicken & Leek Lasagne

50g unsalted butter
2 leeks, washed finely sliced
1 courgette, chopped
2 large, skinless chicken breasts, diced
50g plain flour
600ml (1 pint) full fat milk
1 tbsp grainy mustard
25g gruyere cheese, grated (you can omit this if you like)
6 lasagne sheets ? ready to cook
2 tbsp parmesan cheese

  • Pre-heat the oven to 180◦c. Melt the butter in large saucepan or frying pan, add leeks and cook until they begin to soften.


  • Add the courgette and chicken, and stir-fry for a few minutes until the chicken is just cooked through. Add the flour and cook, stirring continuously for 1 min.


  • Remove the pan from the heat and stir in the milk, a little at a time, until the sauce is smooth. Return pan to heat and bring gradually to the boil, stirring continuously, then simmer for 2 mins. Add the mustard and remove from the heat, add the gruyere cheese and stir in.


  • Lightly oil a lasagne ovenproof dish about 7.5 cm deep. Layer the chicken pieces and lasagne sheets, starting with a layer of chicken and finishing with a lasagne sheet, and using a slotted spoon for the chicken so that you leave the sauce behind in the pan.


  • Spoon the remaining sauce over the lasagne, sprinkle with the parmesan and bake in the pre-heated oven for 25-30 mins until golden brown on top.

Chicken, mushroom and asparagus lasagne.

1 cooked chicken
1 packet of mushrooms
1 bunch of asparagus
Mozarella & parmesan
Fresh lasagne sheets

Make a white sauce the usual way (i add nutmeg)or you could use a bottle of lasagne sauce (home made MUCH nicer).

Cook sheets as per instructions, shred chicken, chop mushrooms & asparagus - not too finely.

Oil dish, layer chicken/mushroom/aspargus, top with sauce, sheets etc. Top off with layer of sauce mixed with mozarella & parmesan. Cook at around 180 for at least 30 mins.

YUM.

I've got a recipe for a lovely chicken and smoked bacon lasagne somewhere. IIRC it's a little faffy at the beginning but not complicated.
