scallops

right, I bought scallops yesterday with the intention to freeze them until I cook them on Sat for guests. But it turns out that they're not fresh but have been defrosted already so I can't refreeze them. Soooo... can I cook them today and keep them in the fridge until Sat lunch ? will they keep that long ? or can I cook them and freeze them (I know you can do that with meat but not sure about seafood) ?

no no no - they won't be nice (or safe?!) if cooked and kept that long in fridge. I guess you could cook and freeze, but I bet they'll taste like rubbery lumps. Best to eat them up tonight and do something else for your guests
