Fresh Coconut - recipes???

Typically, if the kids ask to try something, we buy it (within reason). Generally successful til now.
We've bought a fresh coconut.
Kids loved the water from the middle, but have turned their noses us at the meat.
Anyone got a way of using (or preserving - can I dry it out in the oven and make dessicated coconut??) fresh coconut?

Cake / biscuits preferred. DH does most of the cooking with meat....
