I would be really grateful if you wise bunch could share some nice left over recipes. We are having a roast on Sunday and usually have a good amount leftover. Not quite the mn magic chicken amount, but enough for a decent meal.
Family like most things apart from stir fry, FFS, Which would have been my go to leftover recipe.
Everyone loves curry, pasta, Mediterranean style dishes, soup,anything really.

Paella ? Just use some chorizo and the chicken, a red pepper and some onion. Fry it all first and then add the rice (risotto rice works best) and some paprika and tomato puree and loads of water. Cook down and keep adding water until rice is soft. One of our favourite meals..If you don't want to add the chorizo add some garlic instead as the garlic from the chorizo adds to the flavour.

You're welcome :) it's one of our favourite things and my lot don't like stir fry either!

I'm sure others will be along with some other ideas soon..I could do with a few too!

Fry some onion and a couple of chopped peppers. Add a tin of chopped tomatoes, some creme fraiche and pesto to taste, throw in the shredded chicken and warm through. Love this.

I sometimes chuck in frozen peas as well.

Cook up in a spicy tomato sauce, fill flour tortillas with it, roll up, sprinkle cheese and bake. Serve with salad, sour cream and guacamole. Our version of burritos.

I love leftover chicken dishes. Here are my regulars;
Leftover chicken spicy fried mash- invented in my student days. Leftover mash, chicken, odd stir fried veg (stir fry first) pop in the chicken, couple of splashes of Tabasco sauce, add the mash potato, season and serve.
Chicken rosotto
Popcorn chicken (pain the the a*) to make but lovely. Blend all the leftover chicken with some milk, roll into balls, coat in either egg and breadcrumbs or egg and flour, shallow fry. I serve with mange tout and a side salad.
Chicken chassue
Coq au vin
Chicken casserole
Chicken and barley stew
Honey, lemon and garlic chicken served with rice and a salad, or steamed veg.
Chicken Fajitas/enchiladas/chimichangas

Um, I think I will stop now...

Chicken casserole with leek and mushroom comes out nice, you can put cream in if you want, and other veg like carrot and onion if you have some you need to use. I usually just chuck stuff together, thicken it up with corn flour and it works (see, this is why I would make a terrible TV chef).

Yes Stealth, just once though I think and it has to be piping hot. I think that's the same for most meats.

I have loads of leftover chicken today and have made chicken pasta ( onions, red peppers, garlic fried with a tsp whole grain mustard and dollop of creme fraiche added at the end - chopped up chicken thrown in and added to pasta) delicious.

I'm doing a chicken soup this evening- I've taken remaining chicken off bones and used bones, bay, a carrot, celery and onion to make stock- once this is done ill cube a few carrots, potatoes, some sliced leeks and celery and fry in butter until soft , throw in some thyme if I find some, add a tablespoon of flour to the fried veg, then add chicken, and stock. Makes for a buttery creamy chicken soup. Can't wait.

I often make pie, with fried leeks, mushrooms, thyme, a dollop of creme fraiche and mustard, add chopped leftover chicken, put in a pie dish top with puff and bake for thirty mins.

Hfw has a vegetarian mushroom lasagne, in the veg! Book, which is amazing with added leftover chicken and bacon bitsWink I imagine all mushroom lasagne recipes would be similar and experience the same benefits with a bit of chicken thrown inGrin

A pumpkin laksa is another beautiful vegetarian dish which is much improved with sliced leftover chicken.

I know it's not strictly a recipe- but good old chicken mayo sandwiches are a great leftover option- they're always over mayoed in the shops!

Pie, curry and pasta with tomato sauce and a good dod of soft cheese here. And I always leave enough for a sandwich, with mayo and my weekly allowance of salt.... Mmmmmmmm

Oh and I put the stripped carcass into a freezer bag and stick it in the bottom of the freezer if I don't want to make soup or stock straight away.

Pregnant pause, I just made your chicken soup. Had a chicken carcass with some meat left on it and the soup is gorgeous, added some milk at the end, having it for tea tonight with crusty bread, yum!
