What to have with pulled pork?

Just realised I have no potatoes for roasties! Dinner will be at about 8ish but have to do DS' bedtime routine in about 20-30 mins so don't have much prep time. DP has bread buns but I'm wheat free! Have corn on the cob too.
Have a pretty good store cupboard and in the fridge I have peppers, courgette (but we had roast veg with chicken yesterday), cabbage. Have quite a few different canned beans and pulses, quinoa, polenta.

Help! I've been unintentionally losing weight and v low on energy lately so need some sort of carb really.

Was going to say sweet potato chips done in oven and coleslaw. Not sure if that fits with your weight loss plan?

It's the opposite of a weight loss plan so that would be fine, but I have neither sweet pitaties or coleslaw and it's too late to pop to shops. Am I doomed to pork and corn?

I like it in a brioche bun with salad and coleslaw and some sort of spicy sauce.

With your ingredients I'd probably do some chilli/mint/herby quinoi topped with roasted veg topped with the pork!

I've also eaten pulled pork and chopped salad on rice cakes before when I've been off bread. Nicer than it sounds.

Beans/rice combo sounds like what I'm going for. I have chickpeas, haricot beans, green lentils. Fresh parsley, basil and garlic. So exhausted my head can't fugure out what to do with them all!

Well I changed my mind and went with Lones idea of coleslaw. Cabbage, grated courgette, grated apple, cannelini beans, mayo, dash of white wine vinegar, salt and pepper. For being completely made up it was lovely!
