Gluten free recipe needed

I have a friend coming for coffee and cake on Wednesday. I have a group of friends that regularly meet for coffee and cake and I've invited her sling this week. She is gluten free and I have never made a gluten free ache before!!

I am pushed for time plus have a small baby. I did think about making a cake as I usually do then also providing strawberries and cream so she is included.

Any other suggestions?

seriously. My children require a gf diet and it is a pain in the ruddy arse.

buy a victoria sponge from tesco and decorate it nicely. Grin

My dh is gluten free and is always appreciative if there is something he can eat, whether home made or not. You could buy some plain meringues to go with the strawberries and cream :)

I can't do the nut cake as my DD is anaphylactic to nuts!!

Think the strawberries may be what I end up doing!!

Buy gluten free oats and make flapjacks. Or make chocolate truffles. Rice Krispie Cakes - I think they are now gluten free but best to check on package. Cornflakes should be ok, so you could make white chocolate and cornflake cakes - they are seriously good and very easy.

Buy some Doves farm gluten free flour, comes in either self raising or plain, and bake whatever you would normally bake, if yr recipe requires baking powder you'll need gluten free, find it all in the free From section in the supermarket.

Saves hassle of trialling a new recipe.

Rice Krispies aren't gluten free, but there is a gluten free variety you can buy made out of brown rice. Not seen here but in States.

Corn Flakes contain malt which contains gluten, so don't risk those either.

Only use a specific gluten free cereal when you bake/cook.

Regarding Oats, you would have to use specific gluten free ones which are alot more expensive.

If you can get to a book shop the BBC Good Food series has a gluten free book which is brilliant, very easy recipes without the more exotic gluten free ingredients some recipes have. The Victoria sponge is very good

Delia smith's book of cakes is good too. All recipes have been tested with gf ingredients and apart from a handful, which are starred, they all work. Try Doves Farm website - lots of gf cake recipes there.

I made a usual chocolate sponge but replaced the normal flour for gram/chick pea flour - you couldn't taste the difference!

I put one level tsp of baking powder in per 50g of flour - normally would be SR flour + extra baking powder in my recipe.

Worked a treat and was nice and moist. It took slightly longer to cook - and needed a bit of extra milk to make the right consistency. One word of advice - don't eat the raw mix it's not so nice Wink

I can thoroughly recommend the chocolate brownies recipe on the Doves Farm website. They are lovely Smile
