Sweetcorn fritters

In India fritter are greatly enjoyed. they are a popular street food, and are called bhajiyas or pakoras.
They are made with chickpea flour, being vegetarian AND tasty!
Thinly sliced potato, aubergine, onion, cauliflower, spiced mashed potato balls are all dipped in chickpea batter and deep fried.
Spiced chickpea batter+garlic crepes are made and served hot filled with finely sliced onion, tomato and green chillies, with lime wedges..

Sorry - I forgot to do this last night.

Serves 4.
120g gram (chickpea) flour
1/2 teaspoon baking powder
2 teaspoons cumin
2 teaspoons coriander
1/2 teaspoon turmeric
shake of cayenne pepper
1/2 teaspoon fine salt
200g sweetcorn kernels
3 spring onions finely chopped
big handful chopped coriander
1/2 - 1 finely chopped green chilli (optional)
160ml whole milk or water
Oil for frying

Sift together all the dry ingedients, add sweetcorn & spring onions, coriander and chilli. Slowly whisk in the milk or water until all combined. Drop spoonfuls into hot oil, cook for about 3 mins each side, turning once. Serve with raita. Yum.
The Hugh F-W Veg cook book is consistently good IMO.

The nigella recipe used sr flour and baking powder. I think I need a more crepe like batter instead of an American pancake type batter!

I use a Sam Stern recipe, will google and see if I can find and link for you.

I did come across a Simon Rimmer recipe when I trawled the web, but decided against it. Mind you, I have that much corn, and it's so cheap at the minute, I'll no doubt be trying again!

I have lots of corn and wanted to make some fritters.

I have used a nigella recipe and basically they've turned out like sweetcorn pancakes.

I wanted slightly more greasy, Thai style.

Anyone got a good recipe?
