Calling all cup cake queens!

I've promised to knock up a batch this evening, but I'm missing a few vital ingredients, like a lemon and cooking chocolate, so that's 2 flavours out! I'm thinking vanilla with a jam filling. I'm a good cake baker but don't seem to have the cup cake gift!

A few tips and a fail safe recipe suggestion would be appreciated! I'd like to be eating them while watching the village this evening if all goes to plan!

I have found lemon curd and chocolate chips if that inspires anyone. Every recipe I've found online I'm missing something! So am keeping my fingers crossed you can come up with something?

I would make up a plain batch (4 eggs, 200g of everything else)

Once cooled use an apple corer to remove a bit from the middle then fill with what ever you have in.

Jam
Lemon curd
Salted caramel sauce
Choc spread

Make a batch of buttercream or normal glace icing to cover the holey bit.

mikelitorous is that 200g of self or plain? Baking powder or not? Assuming golden caster is ok, butter is at room temp and ready!

I use self raising. And still use a bit of baking powder.

How did yours turn out?
