Agree with GlaikitFizzog it's such a delicate fish that it needs to be cooked simply.
I would bake it wrapped in greaseproof (en pappion or something poncey like that) with some lemon juice and butter, with jersey royal potatoes. You don't want to over power the fish, just enhance. Boring is sometimes best.
Hopeful bump, as I have to cook the sods in an hour or so...
Online recipes are boring, mainly involving lemon, capers & parsley. What else do you think it could take ref. seasoning/herbs?
