POrk filet - hmm ij have an idea for a recipe but need a real one

I've done it in a herb and bread crumb crust.

Just mix loads of fresh chopped herbs with bread crumbs. Lightly oil/butter the outside of the fillet and crush coating all ove it.

If feeling lazy, use a dry stuffing mix as the coating.

Depends on the size of the fillet but no, not long.

Crap on timings to be honest, I just poke with a knife to check. If the meat is cooked quicker than my veg than I just leave it to rest anyway.

DON'T cover though if leaving to rest or the crust goes soggy again.
