How long can you keep red wine for cooking once the bottle is opened?

Hi,

I often like to keep a bottle of red wine handy for adding to sauces while cooking. I made a casserole about two weeks ago using a bottle, and was thinking of making a bolognese tomorrow using a bit from the same bottle.

Is is OK or could I make myself and the rest of my family ill if I use it? Generally how long does red wine keep for cooking purposes once the bottle is opened?

Dunno but it would freeze in glass size portions or icecubes.

I've kept it for months before and carried on using and it's been fine.
