Carbonara please.

Does anyone have a good recipe for carbonara so it doesn't end up like spagetti and scrambled egg?

Must admit I do a bit of a b***d cabonara, in that it is very un-Italian. I do a thin white sauce, add cheese and bits of ham and pour over spaghetti. Kids like it, but I wouldn't serve it outside the family

Thanks beachyhead. I'm tempted to use cream instead of trying to make the eggs look like cream. It seems more surefire.

I'll have a look at Delia's method though tessasmum. She makes things seem so simple doesn't she?

SM I make a carbonara with eggs, IMO the trick is to make sure the pan is off the heat before you put the eggs in (in my recipe this is the last thing that happens anway, after you have added the pasta), keep tossing the hot pasta with the egg and it should turn the eggs creamy rather than scrambled.

i've done the egg one, nigel slater i think, and the key is to take off the heat so as not to scramble (the bit i left in the pan did slightly "scramble" after time)
