Cooking For One

I want to prepare some meals for mum - she has been so busy visiting sd in hospital for the last couple of weeks. My sister and I have been inviting her back from meals with us but she likes to be able to go home sometimes to relax. I would like to help her out by preparing some meals that she can reheat throughout the week. Any ideas/tips/recipies?

casseroles are easy to cook in bulk, divide into portions, freeze and then reheat as and when

things easily reheatable like shepherds/cottage pie, lasagne, bolonaisse so all she has to do is cook spaghetti

P.S. That beef in beer recipe is fab with a puff pastry pie crust on top too.

the bbc food website is brilliant for inspiration actually. The recipe finder is quite comprehensive.

Simple but good sausage casserole recipe, works well with added chicken thighs/drumsticks too, ooh and cannellin beans
