Roasting a RACK OF LAMB

how long to roast it ? and temp too (got a fan assisted leccy oven)

I have done a herb and mustard crust in the past but requires lots of fresh herbs so I wouldnt bother

right I have to go so...

to serve 4-6 people I would have 2 racks each weighing about 1kg

Heat olive oil in a large frying pan, season the racks and then cook until crispy brown on both sides, about 7 mins.

then stick in preheated oven (230c) for about 10-12 mins (up to 15 mins for fatty racks)

let rest for 10 mins.

that should be '2 racks, each rack weighing about 1kg' - not 2 racks per person

yeah that will do

cook for 15 mins and rest for 10 - if you seal it first it will be scrumlicious
