Christmas Tree biscuits

Hi there

Want to bake some biscuits to hang on the tree. Any recipes? Had one from Good Housekeeping last month but have lost it!

Heres a fab Be-Ro one.

Stained Glass window biscuits

225g/8oz Self raising flour
100g/4oz Caster Sugar
100g/4oz Butter or marg
1/2 lemon, grated rind and juice.
1 egg, beaten
14 boiled sweets (just plain diff coloured ones)


Heat oven to 180c and grease 4 trays

Mix flour, sugar and rub in fat

Add lemon rind and juice and sufficient egg to make a stiff dough

Roll out half the dough thinly, cut in to 7.5/3 inch rounds or whatever shape you want. With a smaller cutter, cut out the middle of your shape and place on the tray. Make a hole at the top of each biscuit with a skewer to thread cotton through to hang.

Bake for about 7 mins, place a boiled sweet in the middle of each biscuit and bake for a further 4 mins until the sweet has melted. Leave to stand for a minute, cool on a wire rack and hang either by a window or on the tree.


It says to use the rest of the dough to make animal shape biscuits but you could adapt it.

They look great when done too!

Thanks. Are they a bit hard for kids to eat cos of the bolied sweet?

125g unsalted butter chopped
1/2 cup brown sugar
1/4 cup golden syrup
1 egg yolk
1 3/4 cups plain flour, sifted
2 tsp ground ginger
1 tsp mixed spice
1 tsp bicard of soda

1 egg white
1 1/2 cups of pure icing sugar
juice of 1 lemon, strained


a. Put butter and brown sugar into bowl and beat with electric beater until pale and creamy

b. add the syrup and the egg yolk. Beat until combined

c. add the flour, mixed spice, ginger and bicarb of soda - mix until well combined

d. put dough on a lightly floured surface and knead until smooth. Wrap in baking paper and refigerate for 30 minutes.

e. roll out dough on a floured surface until 5 mm thick. Use biscuit cutter to cut out shapes

f. place on trays prepared with baking paper and place in a preheated over - 180 degrees celsius

g. bake for 10 - 12 minutes or until ightly golden

h. stand for 5 minutes before transferring to a cooling rack to cool.

Icing

  1. beat egg white, gradually add a tablespoon of sifted icing sugar. Beat between each addition until mixture holds stiff peaks.

  2. Put part of mixture into a piping bag and pipe and edge around each biscuit and allow to set.

  3. Add enough lemon juice to remaining icing until it is the consitency of pouring cream.

  4. spoon lemon icing onto each bisuit keeping within the piped lines.

  5. Allow to set.


    If you don't have a piping bag - I just use a freezer bag or ziploc bag with a tiny edge cut in one corner....

Sorry to be an absolute pain, but is there any chance that you could tell me the weights in lbs/oz?

Grams is ok - I can convert those, but I get lost with the cups !
